Chef Grant Achatz is playing with Fire as he welcomes you to his newest dining experience. According to a recent news release, the Fulton Market restaurant Roister is closing its doors this weekend after eight years in business, but a new restaurant will take its place. The new restaurant, called Fire, is being brought to you by Alinea Group and Chef Grant Achatz, and will open in the same location on Wednesday, November 20.
“In creating this concept, Chef Achatz magnifies open fire cooking techniques including ember cooking, ash-salt crusting, Patagonia-style asado crosses, and bringing back the iron presses. He explored all temperatures from top to bottom,” says a restaurant description, and according to the Fire website, the restaurant will be open from 5 p.m. to 9 p.m. Tuesday through Thursday and 5 p.m. to 9:30 p.m. Friday and Saturday.
